Real Ramen Soup
“As a person living in Japan, I feel sad at how ramen is treated in the west. It is considered the epitome of junk food; a greasy, carcinogenic mess, lacking in any nutrients whatsoever and only to be eaten as a last resort or as a college student… Here in its home country, ramen is, if not the healthiest thing around, at least something that you can eat every day and not get sick....

Make Healthy Food Affordable and Accessible
One of the many goals of the Let’s Move campaign is to:
Make Healthy Food Affordable and Accessible
More than 23 million Americans, including 6.5 million children, live in low-income urban and rural neighborhoods that are more than a mile from a supermarket. These communities, where access to affordable, quality, nutritious food is lacking are also known as food deserts. Lack of access...

Add Spinach to more meals!
Just last night, I made salmon, broccoli, green beans, garlic bread, and pasta roni shells (pictured above). After I cooked the pasta roni, I cut up some spinach and dropped it in there. My family liked it and you can’t taste the spinach, but you are getting the nutrients.
Add spinach to more of your meals such as
eggs
rice
green smoothies
pastas
salad

Green Rice
I add spinach to many of my dishes. I should try this one.
Article from the NY Times by Martha Rose Shulman
Green rice — arroz verde — is a great way to get your kids to eat spinach without realizing it. Serve this rice with just about anything — it has a fresh, herbal flavor. You can make the dish with brown rice, but it won’t have the usual vivid green color. If you use basmati, you’ll...

Niger is facing a food crisis, a grimly familiar predicament in a vast desert country with an explosive birthrate and rudimentary agriculture. Rains and crops failed last year — rainfall was about 70 percent below normal in the region — and now half the population of 15 million faces food ...

What About Grass-fed Beef?
This article is available here at the Food Revolution site.
Cows, sheep, and other grazing animals are endowed with the ability to convert grasses, which those of us who possess only one stomach cannot digest, into food that we can digest. They can do this because they are ruminants, which is to say that they possess a rumen, a 45 or so gallon (in the case of cows) fermentation tank in...

Steve Ells: The Man Behind Chipotle!- A Must Read
It’s a classic variation of the American success story: An aspiring entrepreneur starts a hole-in-the-wall restaurant serving food that’s quick and unpretentious. Pretty soon, he starts a second restaurant, and then a third. Investors flock to the company, attracted to the owner’s relentlessly perfectionist style. Before long, identical versions of that hole-in-the-wall have...
